The flavour

A wholesome hit of habanero lands on the front of the tongue, then rolls into that signature back-of-throat after-burn. Underneath it all is the Tasmanian Diemen mountain pepper and its polygodial — a fruity, rainforest-fragrant compound that releases a slow, tingling burn much like Sichuan pepper. Fierce, but never flavourless.

How to cook with it

• Toss through hot wings or drizzle over fried chicken for a proper sting.
• Spoon over slow-cooked beef, brisket or pulled pork to cut the richness.
